Zucchini All Day Long

This year's garden features a bumper crop of zucchini. We have SO MUCH ZUCCHINI. Talmage planted what he thought were yellow squash seeds but which turned out to be zucchini seeds. In any case, he planted a lot and the harvest has been plentiful.



So, we're trying lots of zucchini recipes. We have a streak going of two week of zucchini consumption so far.  Here are some I've tried from a few cooking websites:

Creamy Cherry Tomato and Summer Squash Pasta

This recipe from CookieandKate.com turned out well. It was pretty easy to put together and I had all the ingredients and it tasted good. It used both summer squash and zucchini. I will make it again. I didn't take a picture of my version but here is the one from the website:


Mom's Zucchini Bread

This recipe is from AllRecipes.com, one of my go-to websites for recipes. It's the most popular zucchini bread recipe on the site with 10,793 ratings and an overall rating of 5 stars. I followed the suggestions of the most helpful review. The review suggested replacing half the oil with applesauce and doing less sugar (2 cups instead of 2 1/4--I think you could go even lower--with half of it being brown sugar). It also said put in more shredded zucchini--3-4 cups instead of 2. I also added a cup of chocolate chips for 2 loaves of bread so my youngest daughter would be more willing to eat it. And she was. For my second batch I decreased it to 1/2 cup but I'll probably do 3/4 cup next time. This picture features the lower amount of chocolate chips. Keep the bread frozen unless you eat it pretty quickly.


Chocolate Zucchini Sheet Cake

This recipe came from a woman I minister to who got it from the website Eat Cake for Dinner. It's very similar to a buttermilk brownies recipes that I've eaten most of my life. I actually like this recipe better. It's quite delicious. Another thing that helped was I used half sour cream and milk to substitute for the buttermilk. Did I mention it's delicious? My family loved it. I've made it twice in the last two weeks but neglected to take a picture, so here's one from the website:


Baked Cheesy Zucchini Bites

This recipe came from Mel's Kitchen Cafe.com. She has a LOT of zucchini recipes. This recipe was not bad but I did make it a little too salty so I will not add any extra salt next time. They tasted pretty good but I'm not sure how much I will be making it. Camille said they were like mini frittatas. Here's my picture:

Grandma's Zucchini Cake

It turned out okay, not great, although my son and husband were definitely fans. It was like a spice cake or carrot cake. The cream cheese frosting covered a multitude of problems. I think I overmixed it so it fell in the middle. Next time I will make it more like my favorite carrot cake recipe since it's pretty much the same. Visiting Susquehanna: The Priesthood Restoration Site

On our way home from Palmyra, we decided to go a couple of hours out of our way to visit the recently opened Priesthood Restoration Site along the Susquehanna River.  This is where we believe that Joseph Smith and Oliver Cowdery received the keys of the Aaronic Priesthood from John the Baptist which gave them the authority to baptize.  This site also has the restored Isaac and Elizabeth Hale home where Joseph and Emma lived for a year as well as the home where Joseph and Emma lived on their own. We spent a couple of hours there and I wouldn't have minded a few more minutes but we had a long way to go that night.  It's a beautiful setting, very much in rural Pennsylvania.  However, on the day we were there, cars at a racetrack nearby were detracting from the peace and quiet.  I'm guessing that's not as big of a problem on weekdays. The Hale Family was quite well-off for their day so their home was probably nicely decorated with wallpaper and carpet. ...

Book Review: Out of My Mind by Sharon Draper

This is a juvenile fiction book about a young girl named Melody with severe cerebral palsy.  Her body doesn't allow her to feed herself, speak, or do much at all.  She's very intelligent with a photographic memory but she can't really communicate.  Finally, in 5th grade, she gets a "Medi-Talker" which is a computer that speaks what she types in.  Finally she has a voice. This book explores what it is like to be severely physically disabled but not mentally disabled. It seems like one of the most frustrating of all scenarios.  She is completely aware of all the cruelty (subtle and otherwise) that her classmates inflict on her because they don't really want to include her in their activities.  One of the saddest moments in the book comes when she realizes that every one of her special ed classmates is kind, where the "normal" ones are not.  Who really has the worse disability? Hansen Family Plot in the Provo Cemetery

On Memorial Day this year, our family went to the Provo Cemetery, as we do almost every year. We spent some time at the Hansen Family plot which contains the grave of my 2nd great-grandparents, Peter and Mary Hansen. They both emigrated from Denmark with their spouses to Utah. My grandfather lost his first wife Ane to cholera on the plains outside of St. Joseph, Missouri, along with three of his little boys within a very short time--about one month. It's a sad story but it's also one of admirable resilience. He brought his one surviving son, Jorgen, to Utah. He married his second wife Maren (Anglicized to Mary) some 9 years later in Utah  She had been married before but lost her first husband at an unknown date. I wish I knew more about her but she left very few records, although I could do more research! Peter and Maren had 6 more children together. The youngest two were twins, Enoch and Ephraim.
